Put carrots in a large pot. Cover with water and bring to a boil. Boil until carrots are soft and can easily be cut with a fork (about 20 minutes).
When the carrots are done, drain the water. Return the carrots to the pot or to a large bowl. Mash carrots until they are in thick chunks, but not mashed like mashed baby food.
While carrots are boiling, slice 1-2 bushels of green onion.
In a large pan, melt the 1/2 cup butter. Lightly saute the green onion in butter.
Add the mashed carrots into the green onion mixture. Stir and heat all the way through.
