Lyonnaised Carrots

There are so many good foods to eat at the holidays! Lately I’ve been posting some of my favorite sweet treats, but let’s not forget about the vegetables! Vegetable dishes are a little harder to get excited about for some people. Luckily, my grandma came up with some yummy veggie dishes that have become traditional to have at Thanksgiving, Christmas and Easter.

This carrot dish is super easy to make and they are so delicious! My family loves them when I make them outside of the holidays, but they have become one of those dishes that we associate with the holidays and usually save for special occasions. With that said, feel free to use this recipe any time! It makes a great side dish to take along to potlucks, family dinners…you name it!

You really only 3 ingredients to make this dish; 5 if you count the salt and pepper. But who doesn’t have salt and pepper in their cupboards at all times? To get started, you just need 2 pounds of carrots, 1-2 bushels of green onion and 1/2 cup butter. You could easily cut this recipe in half if your dinner crowd is small. This recipe will feed about 12-15 people, depending on portion size. Just a note about the green onion: my grandma’s recipe originally calls for only one bushel. My family loves green onion, so I usually add a bit more than a bushel (closer to 2 bushels). It’s your preference!

Start by peeling and then slicing your carrots. I’ve found that the kids are great helpers with peeling!

Put your carrots in a large pot, cover with water and bring the water to a boil. Once the water is boiling, continue to boil for about 20 minutes, or until the carrots are soft when pierced with a fork.

When the carrots are done, drain the water. Return carrots to the pot or another large bowl. Then, take a masher and mash the carrots. You do not want to mash them like mashed potatoes; you want the carrots chunky. Mash until the carrots are in chunks.

While the carrots are boiling, go ahead and slice your green onion.

Once your carrots are mashed, put your butter in a large pan and melt. Toss in your green onion and lightly saute.

Turn the heat to low and add your mashed carrots. Stir thoroughly and until the mixture is heated all the way through. Turn off your heat and add some salt and pepper to taste.

That’s all there is to it! Super easy and super yummy!

  1. Peel carrots and then chop them into slices.
  2. Put carrots in a large pot. Cover with water and bring to a boil. Boil until carrots are soft and can easily be cut with a fork (about 20 minutes).
  3. When the carrots are done, drain the water. Return the carrots to the pot or to a large bowl. Mash carrots until they are in thick chunks, but not mashed like mashed baby food.
  4. While carrots are boiling, slice 1-2 bushels of green onion.
  5. In a large pan, melt the 1/2 cup butter. Lightly saute the green onion in butter.
  6. Add the mashed carrots into the green onion mixture. Stir and heat all the way through.
  7. Add salt and pepper to taste.
