Sometimes I have a hankering for something sweet. I try really hard to be healthy, but I would be lying if I didn’t say that I have a seriously bad sweet tooth. Whenever I am trying to be healthy, I browse for healthy dessert recipes. I don’t feel so guilty or feel like I’m breaking my “diet” if I opt for paleo-types of desserts; desserts that are free of sugar and grains. Usually, these types are desserts contain a higher amount of protein and they use natural sweeteners, like honey, which have health benefits to them. It’s a fair compromise to satisfy my sweet tooth in a healthier way!
This recipe is for a healthier version of rice krispie treats, although the only ingredient they have in common with the original recipe is the cereal itself. I traded in marshmellows and butter for honey and peanut butter. Obviously it doesn’t taste like the original, but they are yummy! And it is a protein snack/treat that my finicky daughter will eat as well.
With only 3 ingredients, this recipe is super quick and easy to make.
First, spray a pan with non-stick spray. Use either an 8×8 or a 9×6. Set your pan aside. In a medium sized bowl, measure out your 2 cups of cereal.
Put your peanut butter and your honey in a small saucepan. Turn on the heat to medium and stir until the mixture is melted and thoroughly combined. This will really only take a minute or two to do, especially if you are using natural peanut butter.
Pour your melted mixture in the bowl with the cereal. Stir well to combine.
Spread into your pan and put it in the refrigerator for a least 1/2 hour to stiffen up.
Cut into squares and serve, or store in an air tight container in the refrigerator for up to a week. They are a lot softer than your typical rice krispie treats, but the get firmer the longer you keep them in the fridge.

- 2 cups rice cereal
- 1/2 cup honey
- 1/2 cup peanut butter (natural)
Ingredients

- Spray an 8x8 or 9x6 dish with non-stick cooking spray.
- Measure 2 cups of rice cereal into a medium sized bowl.
- Pour your peanut butter and honey into a small saucepan. Heat and stir until the two are melted and thoroughly combined.
- Remove mixture from heat and pour over the cereal. Mix well.
- Spread the rice krispy mixture into your prepared pan, patting down firmly
- Refrigerate for 30 minutes or until set.
- Cut and serve. You can keep remaining rice krispie treats in an airtight container in the fridge for a week.
You can use any kind of nut butter in place of peanut butter, and maple syrup in place of honey.
