Step 1:
  1. Prep all of your ingredients. Chop your veggies (as big or as small as you like) and rinse your chicken.
Step 2:
  1. Place your chicken in the crockpot, or stock pot. Toss in the veggies, lemon and sprinkle with seasonings. Cover the mixture completely with water and put a lid on top. Set your crockpot on low for 6-8 hours, high for 3-4 hours, or boil in a stockpot for 20-30 minutes, or until the chicken is no longer pink inside and the veggies are tender.
Step 3:
  1. When the chicken is cooked and starting to fall off the bone, remove it from the broth. Remove the skin and meat from the bones; discard the bones and skin and return chicken to the pot.
Step 4:
  1. Serve and eat right away, or let the soup cool to bag and freeze it.
