Christmas Peppermint Chex Mix

 

A couple of weeks ago we were invited to a couple’s Christmas party and it was a potluck. I was wracking my brain trying to think of something to bring along so I went on a search for a good party food recipe, Christmas style. There are dozens of chex mix recipes out there (my sister-in-law has the most amazing, addicting coconut chex mix recipe!) and I’ve found that chex mix blends are always a huge hit. They serve a lot of people and who doesn’t love the tasty blend of sweet and salty mixed together?

After looking at several recipes, I decided to adapt to what I like. There’s really no right or wrong way to make it, and you can add whatever you want! I wanted something that said “Christmas”, so what better than to add a little peppermint to the mix?

This was really simple to make but was very delicious! It made so much that even after the party, I had left overs. I was picking at it for the next few days; it was a bit addicting.

For my mix, I used two different blends of chex mix. I went with the vanilla flavor and the honey nut flavor. You can use whichever kind you like, but you will need two 10 oz. boxes. I also used pretzel sticks, m&m’s, crushed peppermint candy canes, and Christmas sprinkles (for decoration).

For my chocolate, I used the candy quick white chocolate. It is really easy to use and it tastes great.

First, prepare two baking sheets by lining them with wax paper; set aside for later. Crush your candy canes. I put them in a Ziploc bag and crush them with the flat side of a meat cleaver.

In a large bowl, mix together your chex mixes and pretzels.

Now, melt one package of your cholcolate according to the package instructions. Once it’s melted, you are going to drizzle a little at a time on top of the chex mixture, and then toss your m&m’s and peppermint on top (a little at a time). Give it a gentle stir and then repeat those same steps: drizzling chocolate and tossing on the candy. Continue doing this until the first package of chocolate and about 2/3 of the candy is used.

Pour your mixture onto the lined cookie sheets and spread it out the best you can. You’ll notice that there’s a pretty good coat of chocolate on the chex mix but it’s also pretty thin. I like to have chunks of chocolate throughout, so that’s where the second package of chocolate comes in. You can either use the entire package or only half. I started with half and added a little more, which means I used about 3/4 of the second package of chocolate. Melt your chocolate, just like you did for the first package, and then drizzle it across the top of the chex mix. Sprinkle the remaining candy on top as well as your Christmas colored sprinkles.

Let it cool until the chocolate is completely hardened. Once it is at that point, you can kind of break it apart and put it back into a large bowl to serve. Mmm, doesn’t it look tasty?

Another way you can serve this is by putting it in festive cupcake wrappers. Makes it easy for guests to take a small portion at a time, or to put on goodie trays to pass out to friends and neighbors. (Thanks to my sister-in-law for this idea!)

  1. First, crush your candy canes and set aside. Prep 2 cookie sheets by lining with wax paper.
  2. In a large bowl, mix together the 2 chex mixes and the pretzels.
  3. Melt the chocolate, according to package directions. Drizzle the chocolate over the top of the mix. As you drizzle, toss in crushed peppermint and m&m's.
  4. Lightly toss the mixture and repeat step 2. Continue this until the first bag of chocolate and about 2/3 of the candy is used up.
  5. Pour the chex mix onto 2 cookie sheets and spread it out. Then, melt and drizzle your next tray of chocolate over the mixture. Add remaning candy and sprinkles on top.
  6. Let it cool and then break it up and put it in a large bowl to serve. You can also put them in individual cupcake liners to serve or give away as treats.
