cans
diced tomatoes,
2
cans
corn
1
can
pinto beans
1
can
kidney beans
2
pounds
ground beef
1
large
onion,
finely chopped
1
zucchini,
finely chopped
1/4
cup
cilantro
chopped
1
packet
taco seasoning
(or homemade seasoning)
1
packet
ranch dressing mix
(optional)
tortilla strips or fritos chips
(for topping)
shredded cheese
(for topping)
Instructions
In a crockpot, pour all contents from your canned ingredients; juices included. Stir well.
Finely chop zucchini, onion and cilantro. Set your cilantro aside.
In a large pan, brown your ground beef with your zucchini and onion, incorporating well and breaking up the meat as you go.
Drain the grease from you meat.
Add meat mixture to the crockpot, incorporating well with the canned ingredients.
Add taco seasoning, ranch dressing (if using) and cilantro. Stir through.
Heat on high for 3 hours or low for 2-4 hours. Serve with tortilla strips, cheese or whatever else you like!
