10-Minute Ice Cream Cake

 

The only thing better than a store bought ice cream cake is a homemade ice cream cake; it’s probably 1/3 of the cost and it only takes ten minutes to make! I have made different variations of ice cream cake and every single time it is a huge hit. I like it when desserts are a hit. That means they get eaten up and I’m not stuck with a bunch of left overs. Not that I don’t like left-over dessert; it’s just that my waistline doesn’t like it.

This dessert is perfect for summer time parties, but we live in So Cal, so everyday is ice cream weather. We had a barbeque this weekend and I was cramped on time to prepare something, plus I really didn’t want to turn on my oven. Ice cream cake it is! I’m going to share the recipe with you in a minute, but first, a fun little story for you.

A few weeks ago, I got a text from my daughter while she was in school. She asked me if we knew anybody with the last name Baguley. I texted her back and told her yes, it was my grandmother’s maiden name. She replied that her new friend in her choir class (Samantha) had the last name Baguley. Knowing that it’s not a common last name, and that my grandma had 7 brothers, all grown up in this area, I knew there had to be a connection. Most of the uncles and their kids have moved away out of state but I knew of one that raised his kids in the next city over and likely still had some grandkids in the area.

“Ask her if her grandpa’s name is Tommy,” I told Aubrey.

Bingo! Sure enough, Samantha’s grandpa is Tommy; my mom’s first cousin! That makes Samantha’s dad my second cousin and she and Aubrey are third cousins! How neat is that to discover your new friend at school is your cousin?

I immediately went to Facebook where I found Samantha’s mom. I felt slightly stalkerish and wondered if I should message her or not. She might think I was a total weirdo but then again, both the girls were super excited about the connection and of course Samantha would tell her mom. Turns out, Melissa (Samantha’s mom) was just as excited about this little discovery as we were! We messaged back and forth, connecting lots of little dots of how our paths had crossed over the years; mutual friends, family reunions, etc. After seeing her picture, I totally remembered meeting her at a family reunion shortly after she and Jason (my 2nd cousin) had gotten married. Turns out, my sister and she were in a childbirth class together when they were both pregnant with their oldest sons! (We had totally forgotten about that!)

We decided that we needed to get together and chat some more. I wanted to introduce her to my sister and her kids as well, since they all attend the same school. Jason is on a deployment until next summer, so it was just her and the kids that we’d be getting together with. We decided to have a family dinner together and that family dinner was last night.  How fun is that?

So now, back to the ice cream cake (but wasn’t that a fun story?) Yesterday was the day that we had the Baguleys over for family dinner and this was the dessert I decided on. Like I said, it was so easy and quick to make, but so wonderfully delicious!

All you need to make this cake is ice cream sandwiches, cool whip, chocolate and/or caramel syrup and crushed candy bars.

This time around I decided to use crushed oreo cookies and it was amazing! I’ve used Milky Ways, Reese’s Peanut Butter Cups, Twix. My favorite is Butterfinger candy bars, but I’m in the minority over here with my love for butterfingers. I also love snickers but my husband despises snickers. *Sigh* You can’t make everyone happy…unless you go with Oreos. Everyone loves Oreos!

Before you get started, chop up your candy bars/cookies on a cutting board. For cookies, it was easier to just crush them by putting them in a Ziploc bag and pounding them with a mallet. Plus, I had a helper with me and he’s pretty good at crushing things. Just look at that mischievous little face.

Get out your 9×13 dish and start peeling off ice cream sandwich wrappers. Line up your sandwiches across the pan. As you can see, I cut the sandwiches along the edges to maximize my space and make them fit. We don’t want any wasted space.

Next, spread a thick layer of cool whip across the sandwich bars.

Sprinkle your candy bars/cookies, chocolate and caramel sauce across the top. It doesn’t really matter which order you do it in, but don’t be stingy!

Repeat the same steps with another layer of ice cream sandwiches, cool whip, candy bar and sauce.

That’s it! I told you it was easy! You’ll want to put it back in the freezer for about an hour because the sandwiches will get melty while you’re putting it all together. It will also help to freeze seal it all together. I cut mine into 15 pieces and it seems like a good portion size. You could even cut some slices smaller for small kids.

Instructions
  1. First, chop up/crush your candy bars or cookies into small pieces.
  2. In a 9x13 pan, lay out your ice cream sandwich close together. Cut remaining sandwiches to fit around the edges of the pan.
  3. Spread half of the cool whip on top of the sandwiches.
  4. Sprinkle candy bars/cookies on top of the cool whip and drizzle chocolate and caramel sauces on top.
  5. Do one more layer of sandwiches, cool whip, candy bars and sauces.
  6. Put in the freezer for about one hour, or until the cake is firm.
